Apple Pie

Ingredients:

  • For the crust:
    • 2 1/4 cups all-purpose flour
    • 1 tablespoon sugar
    • 1 teaspoon salt
    • 1 cup (2 sticks) unsalted butter, chilled and cut into small pieces
  • For the filling:
    • 6 to 7 cups peeled, cored, and thinly sliced tart apples
    • 1/2 cup sugar
    • 2 tablespoons all-purpose flour
    • 1 teaspoon ground cinnamon
    • 1/4 teaspoon ground ginger
    • 1/4 teaspoon ground nutmeg
    • 1 tablespoon lemon juice
    • 1 tablespoon butter, cut into small pieces

Instructions:

  1. Make the crust:
    1. In a large bowl, whisk together the flour, sugar, and salt.
    2. Use your fingers to work the butter into the dry ingredients until it resembles coarse crumbs.
    3. Drizzle in the ice water, 1 tablespoon at a time, tossing with a fork until the dough just comes together.
    4. Gather the dough into a ball, flatten it into a disk, and wrap it in plastic wrap. Refrigerate for at least 30 minutes.
  2. Make the filling:
    1. In a large bowl, combine the apples, sugar, flour, cinnamon, ginger, nutmeg, and lemon juice. Toss to coat.
  3. Assemble the pie:
    1. Preheat the oven to 425 degrees F (220 degrees C).
    2. On a lightly floured surface, roll out half of the dough into a 12-inch circle. Transfer the dough to a 9-inch pie plate.
    3. Pour the apple filling into the prepared pie crust.
    4. Roll out the remaining dough into a 10-inch circle. Place the dough over the filling, crimping the edges to seal.
    5. Cut several slits in the top crust to allow steam to escape.
    6. Bake the pie for 15 minutes, then reduce the oven temperature to 375 degrees F (190 degrees C) and bake for an additional 45 minutes, or until the crust is golden brown and the filling is bubbling.
    7. Let the pie cool completely before serving.

Enjoy!

Tips:

  • Use tart apples, such as Granny Smith or Mcintosh.
  • Don't overcrowd the pie plate with apples. This will prevent them from cooking evenly.
  • Don't overbake the pie. The filling should be tender and juicy, not mushy.
  • Let the pie cool completely before serving. This will help the filling set and prevent it from oozing out when you cut into the pie.

I hope you enjoy this delicious apple pie!
